Observation (CORRECTED DURING INSPECTION): At the time of inspection, multiple containers of hot potentially hazardous food such as curry, cooked rice were being cooled down with lids on the containers. Upon inquiry, staff was not able to demonstrate safe cooling process. After education, staff was able to follow proper cooling process and stored all food products to the walk in cooler within 2 hours.
Corrective Action(s): Please ensure that staff is trained of proper cooling process to cool down hot potentially hazardous food intended for cold storagei.e.
60C to 20C within 2 hours
20C to 4C within next 4 hours.

Observation (CORRECTED DURING INSPECTION): Low temp mechanical dishwasher was used for dishwashing. 0ppm chlorine residual recorded during rinse cycle which may result in inadequate sanitation of food contact surfaces.
Corrective Action(s): Please ensure that all food contact surfaces are adequately cleaned and sanitized.

Observation: Buffet services were observed at the time of inspection. Operator has no provided Food Safety Plan for buffet services prior to commencing the services.

Observation: Low temp mechanical dishwasher was not working properly at the time of inspection. 0ppm chlorine residual recorded during rinse cycle after multiple runs. Operator called technician during inspection and had it repaired. 50ppm chlorine residual recorded.
Corrective Action(s): Please ensure that all equipment are maintained in good working order at all time during facility operation.

Comments

Routine inspection conducted.

Findings:
- Temperature of prep coolers, walk in cooler & stand up coolers recorded at or below 4C except
1 prep cooler which was turned off and not used for food storage due to limited food processing.
1 undercounter cooler in bar area turned off and not used for storing any potentially hazardous food or drinks.
- Chest freezers (x3) recorded below -18C
- All handwash sink had adequate supply of hot and cold running water, liquid soap and single use paper towels.
- 200ppm QUATS solution recorded in spray bottle.
- 2 compartment dishwashing sink and 1 prep sink maintained in good sanitary condition.
- Food was stored at least 6 inches off the floor.
- Operator has valid FOODSAFE level 1 certificate (Exp Oct 2024).
- No signs of pest activity observed.

Note - At the time of inspection, it was noted that buffet services have been offered at the facility without prior notification and approval from Fraser Health. Buffet steam table and 2 table top buffet were recorded above 60C and the kitchen door on right was opened by operator to have access to handwash sink during buffet services. The buffet food operation was discussed with the operator. Health approval granted for buffet services subject to the following condition:
Submit updated Food menu and Food Safety Plan for buffet services by Feb 9, 2024 to district EHO for review and approval.
