Chlorine sanitizer (in buckets) measured >100 ppm.
Quats sanitizer in spray bottle measured 200 ppm (for dining room tables and counters).
Temperature checks:
-Basement: Walk-in cooler was at -1 deg C; Walk-in freezer was at -25 deg C.
-Main floor: Walk-in freezer was at -22 deg C; walk-in cooler was at 0-2 deg C.
-Prep line freezers were at -18 deg C.
-Prep line coolers were at 4 deg C.
-Hot holding for breakfast (sausage, eggs, bacon, etc.) was 60-66 deg C.
-Dishwasher final sanitizing rinse reached 72.3 deg C at plate surface.
-Food Safety monitoring log (temp. log) was well-maintained.
-Staff area and washrooms were clean and supplied with toilet paper, liquid soap and hand dryers.
-Pest control monitoring in place. Pest control was onsite at time of inspection.
-Public washrooms were in sanitary condition.
-General sanitation inside and outside (garbage disposal area) was satisfactory at time of inspection.
