Hot held items were > 60 C
Walk-in freezer was at -10 C. The operator stated that it was open this morning. Ensure that it goes down to -18 C today.
Hand sink supplied with hot and cold water, soap and paper towels.
Quats sanitizer solution was at 200 ppm.
No evidence of pests.
General sanitation was satisfactory.
