Observation (CORRECTED DURING INSPECTION): Bleach sanitizer in spray bottle in front service area was too strong (bleaching out test strip). Operator diluted sanitizer in spray bottle at time of inspection. Use test strips (located at two compartment sink in the bakery production area) to verify sanitizer concentration. Only one set of drain plugs available at time of inspection.
Corrective Action(s): Operator to obtain two separate sets of drain plugs. One for the two compartment sink in the front service area and one for the two compartment sink in the bakery production area. Sharing of the one set of drain plugs is temporarily permitted.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): No soap available at hand wash station in the coffee area. Staff were using dish soap at warewashing sinks for hand washing. Hand sanitizer noted again at the two compartment sink in the bakery. Hand sanitizer also noted by the one compartment sink by the back entrance but no paper towel or soap available at this sink.
Corrective Action(s): Operator replaced soap in dispenser at hand sink in the coffee area, removed all hand sanitizer bottles. Hand soap and paper towel to be placed at the one compartment sink by back entrance if food handling/hand washing is taking place here. Best practice is to used hand soap in pump style dispenser for hand washing - no dish soap.

Comments

All other hand wash stations were fully equipped with hot/cold running water, soap and paper towel.
All coolers 4C or less (walk in, display bakery, deli cases...etc)
Freezers -9C to -12C (Ensure all frozen potentially hazardous foods are stored at -18C or less)
General sanitation satisfactory. No obvious sign of pest infestation noted at time of inspection. Both back doors were closed at time of inspection.
Meat slicers in use at time of inspection. Ensure meat slicers are taken a part and thoroughly washed and sanitized minimum once every 4 hours as they are used throughout the day.
Quat sanitizer no longer used/available. Chlorine sanitizer used (see violation code 302).
High temperature dish washer at the coffee bar achieved 71C (with thermolabel).
Manual ware washing procedures reviewed at time of inspection. Ensure food equipment is 1. washed with soap and water 2. Rinsed with clean water 3. Sanitized for two minutes 4. Air dried
All foods appeared protected at time of inspection (ie. stored off the ground, covered...etc)
* Washroom door had self closing hinges installed
* No potentially hazardous foods stored at room temperature. Pizza kept in the back walk in cooler and brought out per order for customers.
* Wall under two compartment sink has been repaired and is smooth, durable and washable.
