Follow-up Inspection:

-A probe thermometer was available on-site. It was reviewed that hot food is to be cooled from 60 degrees C to 20 degrees C within 2 hours and 20 degrees C to 4 degrees C within a further 4 hours (a total time period of 6 hours). Monitor the cooling temperatures throughout the cooling process and use methods such as a stirring, ice water bath, and portioning out the food in shallow containers to rapidly lower the temperature.
-Thermometers were available inside the freezers.
-Temperature logs were being maintained on a daily basis.
-Yogurt containers were not being reused in cold storage areas.
-A food grade container was available for storing open bags of flour.
-The ice scoop was stored in a clean container.
-The front door and backdoor were closed during the inspection. The screen of the backdoor was partly taped to seal it off. The operator is still looking into replace the screen of the backdoor.
-Fly traps were not being used at the time of inspection. NOTE: Ensure that fly traps used in the future are not placed above any food preparation/storage areas and are not placed above equipment storage areas to protect food from contamination.

The following requires your attention:
Ensure that paper towels via a wall-mounted dispenser are available at the handsink. The operator mentioned that the batteries for the current dispenser are expensive to replace and the sensor does not operate accurately. It was mentioned that they will replace the dispenser with a non-battery powered dispenser. In the meantime, continue to use the paper towel roll placed at the counter.
