A routine inspection was conducted, the following observations were made:
- Cold room was 6C; thermometers present; and temperatures recorded daily. Cold room only stored low hazard (shelf stable), ingredients for quality purposes
- General sanitation is good.
- Abell Pest company contracted for monitoring and elimination. Contract for rodents, dry foods pests, and flies.
- New, high temperature dishwasher installed. Monitor and record the temperatures and pressures each day prior to use. Purchase a max/min, waterproof thermometer or Thermolabels to monitor and ensure the rinse cycle temperature is reaching 180F for 12 seconds.
- Hand sinks had liquid soap, paper towels, and running hot and cold water.
- Chemical sanitizer used have active ingredients ranging from alcohol or hydrogen peroxide.
- Metal detectors and X-ray machine in use.
