Observation: Grease trap lid has two large holes that allow debris, food and garbage from floors and sweeping go go inside easily and accumulate. Trap cannot be easily moved or lifted by staff to clean underneath.
Trap is cleaned by third party contractor on a schedule.
Corrective Action(s): Please ensure all debris and food is removed and cleaned out under this cavity area to prevent mold build up, rotting and pest attraction.
Seal off the two large holes with surface material that is easily cleanable.

Comments

Hand wash station supplied with hot and cold water, liquid soap in dispenser and paper towels in dispenser.
Coolers including proofing coolers for dough <4C.
Freezers <-18C.
Line coolers top surface temperature of meats >4C, however, internal temperatures are <4C and operator is keeping lids on the top to maintain the temperature when not in use. Cooler bottom <4C.
Walk in cooler is well organized, items are covered and protected from contamination.
Sanitizer >200ppm (400ppm).
Dishwasher chlorine 100ppm.
No signs of pests at the time of inspection.
Prep counters are cleaned on regular basis, prep counters appear clean.
Staff/customer washroom appears clean and supplied for hand hygiene.
