Make sure that washed, uncooked rice is kept refrigerated until needed, do not leave at room temperature.
Make sure that all chemical cleaners are covered with tight fitting lids.
No other problems noted at the time of inspection,
Sushi rice time logs are being maintained on a a daily basis; all refrigeration and freezers meet temperature requirements; manual dishwashing with bleach sanitizer; general sanitation and food handling satisfactory; no indications of insect or rodent infestation.
