Observation (CORRECTED DURING INSPECTION): Facility had no bleach prepared at the time of inspection.
Corrective Action(s): Facility must have bleach at 100ppm to 200ppm prepared during operations to properly sanitizer food contact and common contact surfaces. Bleach at 100ppm was prepared at the time of inspection.

Observation (CORRECTED DURING INSPECTION): Cardboard was lining the top of a chest freezer.
Corrective Action(s): All surfaces must be smooth, non-absorbent, and easily cleanable. Cardboard was removed at the time of inspection.

Observation: Operator has been unable to locate a shatter resistant light bulb or a light cover for the light bulb in the walk-in cooler.
Corrective Action(s): Operator must either other a shatter resistant light bulb or shatter shield for the light fixture to prevent potential broken glass contamination of foods.

Observation (CORRECTED DURING INSPECTION): Chemical pails were not labelled.
Corrective Action(s): All containers must be labelled to identify their contents (bleach, water, etc) to prevent accidental mixing and/or misuse of chemicals. Containers were labelled at the time of inspection. Ensure containers are relabelled as needed.

Comments

-Walk-in cooler was at 1C.
-Both display coolers were at 4C.
-Back chest freezer was at -18C.
-Front chest freezer was at -20C.
-Upright freezer was at -18C.
-Meat grinder attachment stored in the walk-in cooler when not in use.
-Cleaning and sanitizing carried out in the 3-compartment sink. Bleach prepared when cleaning and sanitizing carried out. Sink plugs available and bleach present.
-Handwash station accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Meat cutting table sanitized after each cutting. Within 2 hours.
-General food storage practices good at the time of inspection. Foods stored off the ground and covered. Pickled chicken and goat adequately separated from raw foods.
-General sanitation satisfactory at the time of inspection.
-Facility has a minor flying ant issues in the front of the store. Operator is installing a front door sweep to prevent potential pest entry.
-Washroom clean and equipped with hot and cold running water, liquid hand soap, and single use paper towels.
