Observation (CORRECTED DURING INSPECTION): A large pot of beef stew in Walk-in cooler at 44 deg C. Operator indicates it was cooked about an hour ago
Corrective Action(s): Improper cooling. You must be following your Food Safety Plan. Do not put foods >20 deg C in the cooler. Operator placed the beef stew in an ice bath and 2 ice wands inside the stew.
