Observation (CORRECTED DURING INSPECTION): Large "pop" cooler with glass door air temperature is at 8-10 C and food temperature is at about 6.5-7C. Temperature records from yesterday show below 4 C. There is frost build up at the back which may be affecting temperature. A small volume of higher risk foods is stored in this cooler.
Corrective Action(s): All higher risk (potentially hazardous) foods are to be stored at 4 C/ 40 F or colder. Move eggs, milk, cream, cheese, yogurt (and any other potentially hazardous foods) to alternate coolers and only use this cooler to store lower risk foods (unprocessed fruit, ketchup, pickles, pop etc.) unless it can keep a temperature of 4 C or colder.

Food Safety and Sanitation plans previously submitted. Keep copies at restaurant (copies are available).
Temperature records are being kept for coolers.
White cooler and cooler in cooking kitchen are at 4 C. See above regarding large cooler.
Large chest freezer - good.
Soup hot holding is at >60 C - good. Soup cooking temperature is >74 C.
Hand washing stations in front area and in main kitchen have hot/cold water, liquid soap, and paper towels.
Chlorine 200ppm is available in labelled spray bottle for sanitizing surfaces. You can also store wiping cloths in sanitizing solution.
Dishwasher has a final hot water sanitizing rinse (98C at the gauge and 72C inside machine) - good. Always wait for the ready light.
Cleaning and organizing - good.
