- All hand wash stations stocked with liquid soap and paper towels. Note: paper towel dispenser is on order for the hand wash station in the back prep area.

- meat cooler on the cooking line ambient air temperature below 4 degree Celsius

- Dishwasher final rinse temperature above 72 degree Celsius at the dish surface. Remove and old caulking from the wall joint and apply new caulking.
