Observation (CORRECTED DURING INSPECTION): Sanitizer had no chlorine concentration. The staff appeared to be not using the sanitizer to sanitize food contact surfaces.
Corrective Action(s): The operator was directed to prepare a new solution of sanitizer of 100ppm chlorine. The owner shall train the staff on how to prepare sanitizer (1 teaspoon of bleach per 1 gallon of water) and when to use it.

210 - Food not thawed in an acceptable manner [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): Observed raw meat and shrimp thawing in cold water in the prep sink. This is not an acceptable thawing method.
Corrective Action(s): The operator was directed to move the shrimp into the walk-in cooler and let cold water running in the sink where vaccuum packaged meats were thawing. Going forward, thaw foods in the cooler at or below 4C.

Observation: Observed debris and food spills in the following areas:
- Shelves in the front cashier area
- Under the shelves in the back dry storage area

- Low temp. dishwasher achieved sanitizing chlorine concentration of 50ppm
- Temperatures of refrigerations units were satisfactory (<4 for coolers and <-18C for freezer)
- Foods are stored in a manner that prevents potential cross-contamination
- General sanitation is adequate

> Ice scoop shall be maintained in a sanitary manner, not embedded in the ice in the ice machine.
> Once cans are open, transfer the food into a food grade container to prevent leaching of chemicals.
