-handsinks fully equipped
-discussed cooling procedures - recommend using a cold ice water bath to cool large quantities of shredded meat before placing in cooler
-all hot holding units at >60C
-all coolers at 4C or less and equipped with thermometers
-freezer at -18C
-bleach spray bottle at 200ppm chlorine
-high temperature dishwasher sanitizing at 82.5C internally at dish level
-temperature logs in use
