203 - Food not cooled in an acceptable manner [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): Five 16L buckets stored in walk-in cooler contained gravy sauce with internal food temperatures that ranged from 12 to 18 degrees C. It was stated that gravy sauce was prepared yesterday. Buckets were labeled "gravy sauce" and "4/3"
Corrective Action(s): Photos taken. Above-noted food was discarded by person in charge. Ensure potentially hazardous food is properly cooled from an internal temperature of 60 degrees C to 20 degrees C or less within two hours, then from 20 degrees C to 4 degrees C or less within the next four hours in order to limit the growth of potential pathogens / production of toxins. Three cooling wands available on site.

Observation (CORRECTED DURING INSPECTION): Vegetable cutter observed with dried on vegetable debris on food contact surfaces.
Corrective Action(s): Equipment was disassembled and placed into dishwashing area to be washed, rinsed, and sanitized. Ensure all equipment, utensils, and food contact surfaces are properly washed, rinsed, and sanitized after use to prevent the potential contamination of food.

Observation: Few mouse droppings observed in the following areas:
- Along floor to wall junction behind kitchen chest freezers
- On floor under shelving in dry storage
- On floor to the left of the mop sink
Corrective Action(s): Ensure above noted areas are properly cleaned to remove all droppings and debris, and then sanitized. Date to be corrected by: Today.
Have premises serviced by pest control technician and provide report to the Environmental Health Officer. Date to be corrected by: April 14, 2023.

Note: Food was covered/sealed and protected from potential contamination at time of inspection. It was stated that premises is being serviced by pest control; however, person in charge unable to provide most recent pest control report at time of inspection.

Observation: Gap observed under back door. Door sweep appears to be warped.

Observation: Dry food debris and spills observed throughout the kitchen (front and back areas), including on floors behind and under equipment, and on shelving.
Corrective Action(s): Ensure above-noted areas are thoroughly cleaned and sanitized. Food debris may potentially attract pest activity. Date to be corrected by: April 14, 2023.

Hot holding internal food temperatures at 60 degrees C or more.
Food is covered. Raw animal products not stored above ready-to-eat items.
Hand washing stations (front and back) accessible and supplied with hot and cold running water, liquid soap, and paper towels.
Other sinks (two-compartment sinks) supplied with hot and cold running water.
Bleach water sanitizer available in labeled spray bottles at 100 to 200 ppm chlorine (in front and back kitchen areas).
High temperature dishwasher measured 78 degrees C at the utensil surface during the final rinse (minimum required: 71 degrees C at the utensil surface).
Ventilation canopy filters in clean condition.
FOODSAFE requirements met at time of inspection (certificate for manager on site expires Nov 10, 2023)
Permit posted at front.
Note:
1. Management unable to locate a probe thermometer at time of inspection. Ensure at least one accurate probe thermometer is available on site for internal food temperature checks.
