Comments

- All hand washing sinks were properly supplied with hot and cold running water, liquid soap, and paper towels.
- Quats sanitizer solution available from dispenser and in sanitizer pails at 200 ppm. Test strips were available onsite for monitoring.
- High-temperature dishwasher reached 79C at the dish surface during rinse cycle (minimum of 71C at the dish surface required)
- Hot-holding units were maintaining temperatures of 60C or hotter.
- Coolers (walk-in cooler and sliding glass door cooler) were measured at 4C or colder
- Walk-in freezer measured at -22C
- Temperature logs available for review and up to date.
- Good food storage practices noted. All food stored off the floor, properly covered, with good separation between raw and ready-to-eat items.
- Dry storage areas satisfactory. Pest-proof containers in use. Scoops properly stored.
- All equipment maintained in sanitary conditions (ventilation canopy, dough mixers, deli slicers, coolers, etc.)
- Two-compartment food preparation sink maintained in sanitary conditions
- General sanitation good at time of inspection
- Pest control in place. No signs of pest activity noted at time of inspection.
- All kitchen staff have valid FoodSafe level 1 certifications
