- Fish and bivalve shellfish are stored in different tanks, each supplied by its own potable water system
- 200ppm chlorine used as sanitizer
- Ice machines are kept in sanitary manner
- Coolers are <4C
- Freezers are <-18C
- Fish tank water measured 11C
- Thawing of fish is adequate (under cold running water)
- Hand sink is supplied with hot & cold running water, liquid soap and paper towels
