Observation: Rodent droppings were still present on the floor in the designated dry storage area.
Corrective Action(s): Clean and disinfect the affected areas with bleach water today. Remove the rodent droppings and continue to monitor for signs of recent pest activity and conduct regular cleaning and sanitizing. Continue with the pest control program and keeping dry goods covered and stored off the floor.

Observation: Plastic shatterproof cover/light shield was missing over the light bulb in the walk-in-cooler.
Corrective Action(s): Ensure the light bulb inside the walk-in-cooler is encased in a shatterproof cover; Correct as soon as possible within 2 months.

Observation: In Operator's absence, no staff on shift had valid FOODSAFE Level 1 or equivalent course training.
Corrective Action(s): Ensure at least one staff member on duty has valid FOODSAFE Level 1 or equivalent course training in the absence of the Operator. Ensure enough staff members take or retake the FOODSAFE Level 1 or equivalent course to fulfill this requirement and provide an update to the district Environmental Health Officer by May 27, 2022.

Observation: Inside of the ice machine had debris present inside of it at the time of inspection. Staff stated they drain and clean and sanitize the ice machine every two months.
Correction: Drain the ice and clean and sanitize the inside surfaces of the ice machine in accordance with manufacturer's directions; Correct today. Clean and sanitize the ice machine more frequently in the future to maintain it in a clean condition.
Comments

Follow up inspection:
-Handsink was accessible and properly supplied for handwashing in the back cooking and ware-washing area.
-Ice machine appeared to be in a clean condition. Staff stated they had drained, cleaned and sanitized it.
-Cardboard liners were removed.
-Empty milk cartons were not being used to store pots and pans.
-Dry food products were stored separately from shoes and other personal items of staff.
Signature on this report is not required due to the COVID-19 pandemic.
