Corrective Action(s): Required operator to remove all knives that have food stains, clean and sanitize them before re-using them. All utensils must be cleaned and sanitized after use and when not in use.

Overall sanitation other than noted okay; no other accumulation found at the time of inspection. Food debris and garbage on the floor but it was after a lunch rush. Ensure to clean up the area once traffic dies down.
Hand washing stations stocked with liquid soap and paper towel
Hot and cold running water available at all sinks
Meat slicer cleaning schedule is being used and updated daily
QUAT sanitizer available throughout facility; detected 200 ppm of QUAT from spray bottles
High temperature dishwasher in good working order; detected 77.7 C at plate level after final rinse cycle
Three compartment sink also available for manual dishwashing for those items that do not fit into the dishwasher; QUAT sanitizer dispenser in good working condition, detected 200 ppm of QUAT
All coolers at 4 C or lower; all freezers at -18 C or lower; all hot holdings at 60 C or higher
No sign of pests noted at the time of inspection.
