Observation (CORRECTED DURING INSPECTION): Food-contact surface sanitizer solution in spray bottle was tested to be at 0ppm (chlorine).
Corrective Action(s): Operator prepared fresh bleach sanitizer solution at time of inspection. 100ppm chlorine detected.
Ensure to mix 1/2 tsp of bleach per litre of water for proper concentrations, and label sanitizer spray bottles.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): Front hand sink has one tap only, and water does not get hot enough for proper hand washing.
Operator stated this hand sink is rarely used, as food handlers in kitchen use the back hand sink for hand washing.
Corrective Action(s): Contact plumber and replace faucet if necessary. All sinks must have hot and cold running water.
In the meantime, continue using hand washing sink in back of kitchen for hand washing.

Observation: Front hand sink faucet to be repaired or replaced, as water does not get hot enough (water temperature below 38C at this mixed water tap).

Observation: Hand sink at back of kitchen was missing soap and paper towel dispensers.
Corrective Action(s): Install wall-mounted liquid soap dispenser and paper towel dispenser at the back hand sink.
Continue supplying this hand sink with temporary liquid hand soap bottle and paper towel roll in the meantime.

- Hand sink in back kitchen was properly supplied with hot and cold running water, liquid soap, and paper towels. *Install wall-mounted soap and paper towel dispensers (see violation code 311).
*Ensure hand sink in front kitchen area has adequate hot running water for hand washing (see violation code 401 & 308).
- Manual dishwashing sinks maintained in sanitary conditions
- Bleach available for sanitizing food-contact surfaces. *Reminder to mix 1/2 tsp of bleach per litre of water for proper concentrations.
- All coolers were measured at 4C or colder
- All freezers were measured at -18C or colder
- Hot-held gravy and chicken measured at 60C or hotter
- Accurate thermometers available
- Food storage practices were satisfactory
- Equipment maintained in sanitary conditions. General sanitation satisfactory. *Ventilation hood filters for the deep fryers located in the front kitchen require cleaning and sanitizing soon.
- No signs of pest activity noted at time of inspection. Screen available for back door.
