Observation (CORRECTED DURING INSPECTION): Meat slicer observed with accumulation of old meat residues. Staff stated the meat slicer had not been used today.
Corrective Action(s): Ensure to disassemble meat slicer after each use and at a minimum of every 4 hours to clean and sanitize all parts thoroughly. Staff began cleaning meat slicer at time of inspection.

Observation (CORRECTED DURING INSPECTION): No sanitizer solution was available for use in the meat department at time of inspection.
Corrective Action(s): Sanitizer solution must be prepared and ready to use during all hours of operation, and changed every 4 hours. Operator prepared bleach solution in bucket for soaking wiping cloths at time of inspection. 100 ppm chlorine detected.

Observation (CORRECTED DURING INSPECTION): Hand sink in meat department was missing paper towels.
Corrective Action(s): Keep hand washing stations equipped with liquid soap and paper towels at all times to facilitate proper hand washing. Operator supplied hand sink with paper towel at time of inspection.
