Observation: - Raw fish and chicken stored above vegetables in walk-in cooler.
- Many food items in coolers were uncovered
- Dry ingredient bin was missing a lid
- An opened can of tomato sauce was stored in its original can in walk-in cooler.
Corrective Action(s): - Store all raw meat/chicken/fish BELOW ready-to-eat food items such as cooked food and vegetables.
- Ensure all food items in coolers are properly covered.
- Lid for dry ingredient bin was replaced at time of inspection.
- Once opened, food in tin cans must be transferred to food-grade containers.

Observation: Hand sink and soap dispenser in middle of kitchen has been removed.
Corrective Action(s): RE-INSTALL HAND SINK AND SOAP DISPENSER, as per previously approved floor plans. Changes to the kitchen cannot be done without health approval.
One other designated hand sink is available in the food prep area in the meantime, as well as the food prep sink which is equipped with liquid soap and paper towel dispenser.

Comments

- All other hand sinks were available and properly supplied with hot and cold running water, liquid soap, and paper towels.
- Food-contact surface sanitizer available in spray bottle at 200 ppm (chlorine bleach). Ensure to mix only 1 tsp bleach with 1 litre of water for proper concentrations.
- High-temperature dishwasher reached 74.7C at the dish surface during rinse cycle (minimum of 71C at dish surface required).
- All coolers were measured to be at 4C or colder. *Ensure tops of prep coolers are kept closed as much as possible.
- Walk-in freezer measured to be at -22C. Door to freezer was properly closed.
- Organization of dry storage areas satisfactory.
- No signs of pest activity noted at time of inspection.
