Observation (CORRECTED DURING INSPECTION): 1. Deli slicer's sharpening guard accumulated dried food debris. A staff initiated cleaning procedure at this time.
2. Small amount of in-use utensils (appears to be clean and new) stored in a visibly clear water at 24C. A staff added ice to the in-use utensils storage container at this time. Ensure in-use utensils are stored in a clean empty container (washed and sanitized every 2-4 hours) or keep them in ice water to minimize bacterial growth.

Observation (CORRECTED DURING INSPECTION): Trays of raw eggs stored on top of ready to eat products (e.g., bean sprout, salad). A staff relocated raw eggs to bottom shelf at this time.

Observation: Staffs on site at the time of inspection (May 23, 2023, lunch shift) did not have a valid FOODSAFE Level 1 or equivalent certificate.
Corrective Action(s): Ensure at least one staff with a valid FOODSAFE Level 1 certificate is on site during operation. Correct this by: immediately.

Routine inspection conducted:
Hand washing stations are fully equipped with hot and cold running water, liquid soap and paper towels.
General sanitation is adequate.
Food contact surfaces sanitizer measured at 200 ppm chlorine.
High temperature dishwasher's sanitizing cycle was measured at 72.5C at the plate level (1st attempt).
No sign of recent pest activity noted at this time.
All coolers measured at 4C or less.
All freezers at adequate temperature. Products stored in a frozen state.
Hot holding measured at 60C or higher.
Only small amount of potentially-hazardous-foods stored in an ambient temperature for lunch rush only. Foods in ambient temperature are time tracked.
Kitchen ventilation hood appears to be in a sanitary condition. Next cleaning due August 2, 2023.
Ice machine in a sanitary condition.
