Premises well maintained

Hand sinks equipped with soap and paper towel

Hot holding over 60C, monitor "Hot Chicken" unit, automatic door remains open (malfunction), cold air bringing temperature down on open air unit. Operator to have door serviced to close. Hot holding chicken unit currently reading 60C (borderline). Monitor temperature of chicken (internal temperature), if drops to below 60C move to another hot holding unit until serviced.
