Observation: 1. French fry cutter that is used to dice pepper and chop cilantro is kept with visible food debris.
2. Both new and old dough residue were noted in the dough machine.
Corrective Action(s): Clean and sanitize dough machine and frech fry cutter. Dough machine, especially, require deeper cleaning to remove older residues. Correct this by: immediately.

Observation (CORRECTED DURING INSPECTION): Food contact surface sanitizer was empty at the time of insepction. Bleach sanitizer was prepared at the tiem of inspection.

Observation: Observed the following:
- a pot of flour under the hand washing sink requires a cover
- Bins in the walking cooler for diced onion and diced pepper is not suitable for its intended purpose
- an open bag of whole wheat flour in the back area
Corrective Action(s): Items addressed in the observation section must be trasnferred to food grade container with tight fitting lids. Correct this by: March 1, 2021.

- Hand washing station equipped with hot and cold running water, liquid soap and paper towels
- General sanitation is adequate
- 2 compartment sinks used for manual dishwashing.
- In-use utensils stored in a sanitary manner
- Adequate handwashing noted
- Staff demonstrates good hygiene
