Routine check:
Coolers are at 4 C or colder.
Hot holding - time tracking carried out (2 hours and discard).
Chlorine used as a sanitizer for wiping cloths and food contact surfaces - every 2-4 hours.
Chlorine sanitizer (10-200ppm) is also used to manually wash-rinse-sanitize-and air dry all utensils, bowls, etc.
Single service items for customers.
Hand washing station has liquid soap and paper towels in dispensers.
Food Safe - owner is available this shift. If Food Safe certificate is >5 years old (prior to 2013) then an on line refresher course is required to renew for another 5 years. Card given.
