Walk in cooler air temperature < 4 C.
Right side line cooler (gravies) air temperature is <4 C. Fill upper inserts so that the food will be used within one shift (food temperature is < 4 C once stirred - good).
Left side line cooler (dairy and produce) air temperature is 6 C but food temperature is <4 C. Keep temperature records.
Hot holding not observed today.
Hot foods are cooled by dividing into smaller volumes placed in shallow pans/containers and storing in walk in cooler. An ice wand is also available to help with quick cooling.
Hand sinks (kitchen and staff washroom) have liquid soap and paper towels in dispensers. Non-latex disposable gloves are also available.
Quats sanitizer is 200ppm - good.
Main dishwasher has a final sanitizing rinse of 71 C measured inside of the machine (good).
Glassware washer has a final chlorine sanitizing rinse.
Cleaning schedule reviewed.
Food storage/prep room - recommend an additional sink as previously discussed.
