Routine: - walk in cooler: 4 C - small freezer: -15 C - larger freezer : -16 C - bar cooler : 3 C - cold holding unit not in use during inspection - hot holding of rices and sauces: >= 60 C - hand sinks and staff washroom supplied with liquid soap, paper towel, hot and cold water - labelled spray bottles had 100 ppm chlorine - dishwasher had a final rinse of 90 C at gauge and 71 C at plate, ensure final rinse gauge is at least 82 C before running a cycle. - no signs of pest activity noted during inspection - screen door in use and appears to be in good condition - food appears to be protected from contamination - food stored off the ground, covered, organized - ice machine maintained in sanitary condition - scooper stored in unit with handle facing up to opening - general sanitation excellent REMINDER: washroom is for staff use only Note: -Back 2 light fixtures still not functioning correctly - owner will be replacing fixtures
