Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: 1) One bucket of Quats sanitizer was measured at 100ppm. 2) The ice bin appear to have mildew on the corner. When paper towel was used to wipe down the mildew like area, brown substance was removed. Repeat. Ice bin was informed by manager to be cleaned nightly. 3) The blizzard metal ring holders are informed to be rinsed off at dump sink in the front, then soaked in water and then sanitizer before next use. No drying step noted. Two buckets with metal rings soaked inside measured 100 and 200ppm Quats.
Correction: 1) Please ensure that there is 200ppm Quats sanitizer for use at all times. 2) Discard ice. Ice bin needs to be cleaned and disinfected more carefully and mildew and build up is common around corners of the bin. 3) Please send section in sanitation plans regarding procedure to clean and sanitize metal ring holders for blizzard.

Mushrooms are now pre-portioned, dated and stored in the walk-in cooler.
Mushrooms appear to be non spoiled today.
Quats sanitizer in all buckets and sink was measured at 200ppm.
Manual warewashing at three compartment sinks properly setup.
Ice bin emptied, ice is now taken from ice machine directly.
Blizzard metal ring holders are now rinsed, soaked in sanitizer then air dried on the racks for reuse.
Metal ring holders are washed via three compartment sinks at the end of the day as per the manager.

Food covered in the walk-in cooler. No food stored on the floor of walk-in freezer.
Raw frozen patties are stored in a bag of a cardboard box in the freezer.
No single use utensils appear to be reused at time of inspection.
Ceiling light replaced upstairs. Grouts on floor tiles around mop sink finished.
Wall tiles around dishwashing sink have been patched.
