Followup inspection to Rpt # VCHN - BGES27:

Transition of operations from temporary deli kitchen to newly renovated deli kitchen by Monday December 9, 2019.

Deli kitchen renovated as per approved plans.
All 3 compartment sinks installed and available for use. Quats dispensed at 200ppm from each chemical dispensing system at the 3 compartment sinks.
High temperature dishwasher installed and registers over 71 degrees C at the plate surface during the final rinse cycle.
All hand sinks provided with hot/cold running water, liquid soap and single use paper towels.
200ppm quats available for use in labeled spray bottles. Staff continues to clean and sanitize all food contact surfaces.
All construction material and debris removed from renovated deli.
Under the counter coolers at or below 4 degrees C.
One under the counter freezer at -15 degrees C. Monitor and ensure -18 degrees C or less.
Hot holding cases at or above 60 degrees C.
Both new preparation cooler inserts and lower sections at or below 4 degrees C.
Walk in cooler at or below 4 degrees C.
Walk in cooler for rotisserie chicken at or below 4 degrees C.
New walk in cooler in back area at 3 degrees C.

Flooring in the retail area to be finished before Monday December 9th.

Note: sushi to be offered for sale fromt he new deli. An update food safety plan to be submitted for review. Onsite food safety plan includes details of acidifying the sushi rice, display temperatures, cooling parameters, etc.
