Corrective Action(s): Clean and sanitize the knife holders and all the knives stored in. Food contact surfaces must be maintained in a sanitary condition at all time. Correct by: Immediately.

Observation (CORRECTED DURING INSPECTION): Sushi bar area bleach sanitizer measured with a concentration of less than 100 ppm. 100-200 ppm is required to properly sanitize food contact surfaces.
Corrective Action(s): Discard and refill the bucket with 100-200 ppm bleach sanitizer. Clean and sanitize the all food contact surfaces in the sushi bar area.

Observation: 1. Raw seafood stored on top of vegetables in side the walk-in cooler.
2. Scoops were stored inside the vinegar and soy sauce buckets with the handle part immersed inside the sauces.
Corrective Action(s): 1. Store any raw seafood under the vegetables and any ready to eat products to limit potential contamination.
2. Scoops for sauces should be stored separate in a clean area. Do not store scoops inside the sauce container. Correct by: today.
