Observation: Cardboard was used to line the bottom of the glass door cooler unit.
Corrective Action(s): Discontinue the practice of using cardboard to line surfaces - all surfaces must be smooth, non-absorbent, and easily cleanable.

Comments

-Upright cooler was at 4C to 5C (ensure the fan area of the cooler is not blocked to allow for proper air flow).
-Front beverage cooler was at 4C.
-Upright freezers were at -13C and -18C.
-Food in hot holding table is time tracked and reheated once (within 2 hours) and foods are discarded if not sold 2 hours after reheating.
-Hot holding of rice was greater than 60C.
-Cleaning and sanitizing carried out in the 2-compartment sink. Bleach and sink plugs available.
-Handwash stations accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Bleach sanitizer pail and spray bottle tested at 100 and 200ppm. Ensure labels are checked and containers relabelled as needed.
-Mandolin slicer was properly disassembled for cleaning and sanitizing.
-General food storage practices good at the time of inspection. Foods stored off the ground and covered.
-General sanitation good at the time of inspection.
-Facility serviced by professional pest control (offered by mall management).
-No signs of pests noted at the time of inspection.
-FOODSAFE Level 1 valid until March 01, 2028.
