Observation: - Spring rolls were being made too close to the dirty dishes side of the dishwasher.
- Stacking of one dish directly on top of food in another dish in the walk-in-cooler.
- Raw meats stored on the same shelf as limes and oranges.
Corrective Action(s): - Please be careful where food is being prepared. Too close to the dishwasher may contaminate the food being prepared with dirty water splashing from the dishwashing activity.
- Only stack dishes if the food is properly protected from contamination from the bottom of the dish on top.
- Store raw meats below or on a different shelf from limes and oranges.
