Observation: Accumulation of food debris and old mice droppings found on the floor, along the walls, under prep table and the dishwashing area. The food debris will attract pests and the mice droppings have germs/pathogens in them.
Corrective Action(s): Immediately clean the mentioned areas with hot water and soap, and then sanitize with a bleach and water solution. These areas shall be cleaned every night, ensure staff are reaching all the way to the wall to clean the floor under prep tables and equipment in the kitchen.

Observation (CORRECTED DURING INSPECTION): Found cardboard lining a shelf, in the front service area, that had accumulated grease and food on it. Cardboard is not durable or cleanable, the food and grease will attract pests.
Corrective Action(s): Immediately throw away the cardboard. If you wish to use cardboard to line shelves, the cardboard MUST be thrown away at night and a new piece placed on the surface in the morning. During the inspection, staff changed the cardboard with a new piece.

Comments

A routine inspection was completed:
- Coolers 3C or colder; freezers -21C or colder; hot holding units above 60C; and thermometers present.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Low temperature dishwasher had [Cl2] between 50-100ppm.
- Bleach sanitizer in spray bottles and cloth buckets had [Cl2] over 200ppm.
- All foods stored in food grade containers; covered; labelled; date coded; foods stored in groups with raw proteins separate or below RTE foods; and all foods stored 6" off the floor on shelves or platforms.
- Storage areas are clean and organized.
- No expired foods in use or for sale. FIFO rules being followed.
- General sanitation level is good. No signs of pests.
- Exhaust canopies were last serviced in February 2023, next service due in August 2023 as per sticker.
- FoodSafe certified staff present, or those that possess an equivalent (recognized) course.

ACTION:
Ensure to pay the yearly health permit fees of $250.00 ASAP.
