308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)] Observation: Temperature of the isand cooler across from the cash registered ranged from 7-8.5 degrees C at the time of inspection. All potentially hazardous foods ( sandwiches and dairy products) were transferred to the walk-in cooler at the time of inspection. Corrective Action(s): Repair or adjust the unit so that it is capapble of maintaining all foods at 4 C or below at all times. Do not store any PHFs in this cooler unlesss the cooler is consistently able to maintain 4 C or colder ( Immediately). Violation Score: 9

* The quats dispenser at the double sink was unable to dispense 200 ppn quats sanitizer. Recommended using wall-mounted properly calibrated quats sanitizer dispenser for filling spray bottles of sanitizer. Sanitizer test strips must be available on site. Walk-in cooler < 4 C. F'real freezer < -18 C. Hot dogs condiment cooler < 4 C. Beverage coolers below 4 C Ice cream freezer < -18 C. Dairy cream dispenser < 4 C Hot holding of hot dogs and taquitoes > 60 C. Liquid sop and paper towels available at the hand sinks. Quats sanitizer at the dispenser tested 200 ppm. General sanitation is satisfactory.
