Observation (CORRECTED DURING INSPECTION): Cooked tempura stored under ambient temperature beside the deep fryer. Internal temperature measured at 21C.
Corrective Action(s): Operator move the tempura into the sandwich cooler. Cooked tempura is a potentially hazardous food that must not be stored above 4C or below 60C.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: Bleach sanitizer in the back kitchen bucket measured at less than 100 ppm. 100-200 ppm is required to properly sanitize food contact surfaces.
Corrective Action(s): Discard and refill the aforementioned bucket with 100-200 ppm bleach sanitize bucket. Clean and sanitize all food contact surfaces with the newly made sanitizer.

Observation (CORRECTED DURING INSPECTION): 1. Raw fish was being cut on a piece of cardboard.
2. A bucket of raw cutted fish was stored inside of a plastic bucket outside the facility.
Corrective Action(s): Aforementioned food was discarded by the operator. Do not use cardboard as a liner for cutting. It is not made from food-grade material. Do not stored any food item outside your premises.

Observation: Rodent droppings observed at the following areas:
1. Under the dry storage stainless steel table.
2. Under the sushi bar area at the front area.
Corrective Action(s): Clean the aforementioned areas and remove all rodent droppings. Observed the activities and contact professional pest control if required. Correct by: today.

Observation: Accumulation of food debris and grease observed at under the cook line, especially under the deep fryers and on the shelves used to stored pans.
Corrective Action(s): Clean and sanitize the aforementioned area. Follow your sanitation plan for regular cleaning schedule.

Observation: Cutting board had extensive crevices on the surface and may not be cleaned and sanitized properly.
