-Follow-up inspection to July 25, 2019.
-Food safety plan has been completed and staff appear to be following new food safety plan.
-Chemical dishwasher had a final rinse of 100ppm chlorine on the dish surface (minimum 50ppm required for proper sanitizing). Staff are now checking and recording the chlorine concentration three times a day. Ensure staff follow testing procedures and inform management if concentrations are below the minimum level. One test indicated the chlorine level was at 25ppm.
-Sushi rolls are now made to order and sushi rice had a pH of 4.0. Sushi rice can be left at ambient temperature if the pH is 4.2 or less.
-Facility has been serviced by a professional pest control operator and has been provided with fruit fly traps and a cleaning foam for drains. Ensure facility is maintained in a clean and sanitary condition, especially at night, to prevent an infestation of fruit flies.
-Prep cooler has been serviced and ventillation has been improved in the cooler unit. Top and bottom portion of cooler was at 4C. Temperatures are checked and recorded three times for cooler units. Ensure staff follow proper corrective actions when temperatures limits are not met.
-Light cover has been installed.
