Observation (CORRECTED DURING INSPECTION): Faucet to handwash station very loose.
Corrective Action(s): Make sure station is stocked and in good repair so staff can wash hands in the meat cutting room. This will be checked at next scheduled inspection.

Comments

Produce section:
- Vegetable prep cutting board at double sink should be soaked to bleach out discoloration.
- Dishwasher - discussed procedures for bulk scoop cleaning and sanitizing. OK. Temperature audit: Above 71 C at plate.
- Handwash station - OK.
Meat Department:
- Handwash station not adequate (see violation).
- Make sure staff soak all equipment and utensils in quats for 2 minutes for proper sanitizing. Spraying with quats not good enough.
Dairy:
- Floor of walk-in cooler at display doors needs thorough cleaning.
cooling units below 4 C.
Bakery:
- Make sure any utensils manually washed get immersed in quats solution for 2 minutes or following manufacturers instructions.
- Quats at 200 ppm at dispenser.
- dishwasher (big one for pots and pans). Temperature audit:
- sink taps noisy to the point staff are reluctant to use hot water. This should be fixed.
- cooling units less than 4 C.
- Freezer below -18 C.
Generally pretty clean in this area, minus the floor drain by the dishwasher. This should be cleaned up and kept cleaner.
