302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): None of the 4 sanitizer spray bottles had detectable sanitzer in them, in the foil cleaning area. One of the bottles had solution that was thick and viscous and couldn't be sanitizer.
Corrective Action(s): Ensure that the sanitizer bottles are refreshed regularly. Have Quat test strips at the sanitizer dispensing stations as well as the foil cleaning area for testing sanitizer.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): The 2-compartments sink in the ambient produce area did not have any soap or paper towels in the dispenser. The paper towel dispenser at the handsink by the bin washing area was empty.
Corrective Action(s): Ensure that sinks are fully equipped at all times. Do not rely on staff to inform you when the soap or paper towel dispensers are empty. The facilities maintenance personnel should be doing daily checks to ensure that the dispensers are fully stocked at all times.

Observation: Two plastic bins observed by the 2-compartment sink in the ambient produce area that were cracked and breaking apart.
Corrective Action(s): Discard the bins. Ensure that only intact bins are used for produce.

Comments

General Comments:

Warehouse is for food storage and distribution. When orders are received, the number of bins required are allocated to the orders. The bins are then placed on the conveyor system which then go to the various zones where staff pick out the products ordered. The bins are then combined at the end and assembled.
All cooler items get placed inside a foil with gel packs (to be returned for reuse). All freezer items get placed inside a foil with packs of frozen dry ice (discarded by customer upon receipt of the order). Frozen dry ice can maintain temperatures up to 12 hours.
Any trimming (minimal), washing of produce occurs within the ambient produce staging area. Staff wear gloves when handling produce.
Warehouse maintained in sanitary condition with food stored on racking or pallets.
No signs of pest activity at time of inspection. Pest control contract in place with monthly service
Temperature of walk-in cooler was 3 degC; produce cooler was 4 degC; walk-in freezer was -19 degC; overstock freezer was -21 degC
Delivery trucks are refrigerated to maintain temperatures at or below 4 degC and temperatures are displayed by the driver's seat.
Temperatures are checked and recorded daily.
Coolers/freezers have alarm systems in place
200ppm Quats sanitizer was available at both sanitizer dispensing units.
Frozen foods once received are staged and registered in the ambient dry storage area before being stored in the freezer (maximum amount of time the products are out of the freezer is 1hour). Temperature of the frozen foods are checked upon receipt.
PHF's once received are staged and registered in the produce cooler (under refrigeration).
As per manager, fresh meats that are within 2 days of their BB date do get frozen and get sold as frozen.
Bins are washed and dried in a high temperature warewasher once they're received from customers. Foils are wiped down with the Quats sanitizer spray once received. Gel packs are also wiped down using the Quats sanitizer.
