Observation: Exhaust hood vents observed to have built-up of grease just above the flat grill. Built-up of food and grease observed underneath the cookline. Staff informed external cleaners are contracted every 2 days to clean the kitchen. Staff informed exhaust hood vents are cleaned once a week.
Corrective Action(s): Clean aformentioned areas. Increase cleaning frequency for exhaust hood vents 2x/week to prevent grease build-up. Increase daily cleaning underneath the cook line and speak with external cleaning contractor to ensure deep and thorough cleaning is conducted underneath the cookline area (grill area). Email pictures to inspector to validate violation has been corrected. Corrected by: September 22, 2023.

Routine Inspection conducted today.

Handwashing sinks well equipped with hot and cold running water, liquid soap, and paper towels.
QUATs spray bottles at 200ppm. 2-compartment sink available. Low-temperature dishwasher measured at 100pm chlorine final rinse. Glasswasher measured at 12.5ppm iodine final rinse temperature.
Prep coolers, stand-up cooler, under counter cooler, walk-in coolers measured at 4C or lower. Walk-in freezer measured at -18C.
Food observed to be stored at least 6 inches off the floor. Ice machine and meat slicer observed to be in sanitary condition. Ice scoops observed to be stored outside ice machine.
No signs of pests observed.

NOTE: Ensure bar walk-in cooler floors is cleaned on a daily basis. Ensure Chef (Kitchen Manager) has valid FOODSAFE LEvel 1 certificaiton.

Overall, facility is well organized.
