Observation (CORRECTED DURING INSPECTION): Knives stored in soiled cardboard tray next to the 2 compartment sink.
Corrective Action(s): Ensure all cleaned and sanitized equipment is stored in a sanitary manner at all times. Instructed operator to manually rewash knives.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION):
- Observed staff rinsing off dishes/utensils being sanitized in 100ppm bleach at the 2 compartment sink with water.
- Observed operator washing plates and forks in the front utility sink. Observed customers being served meals on reusable plates with metal forks.
Corrective Action(s):
- The next correct step after sanitizing dishes/utensils in an approved sanitizer is to air dry. Manual ware washing steps are:
1. wash detergent
2. rinse with clean water
3. sanitize in 100ppm for 2 minutes
4. air dry
Instructed operator to rewash all dishes and utensils.

- Seating area has ~ 15 seats. Premise only equipped with a 2 compartment sink and a domestic dishwasher. Operator unable to demonstrate the suitablility of using a the 2 compartment sink and domestic dishwasher to clean and sanitize utensils/dishes. Reduce seating to 10 seats or less and go strictly single use items only. Correction ORDER issued.

Observation (CORRECTED DURING INSPECTION): Staff preparing foods reusing single use gloves. Did not observe a single staff member wash hands using warm water, liquid soap and drying using single use paper towels.
Corrective Action(s): Ensure single use gloves are discarded after becoming soiled, changing dutes, washing dishes, etc. Wash hands using liquid soap and drying using single use towels.
