Observation (CORRECTED DURING INSPECTION): No surface sanitizer available at the time of the inspection. The staff stated that they use sanitizer as needed.
Corrective Action(s): Ensure to have surface sanitizer available in spray bottles at min 200ppm QUAT solution at ALL times to properly sanitize food contact surfaces.

Comments

- General sanitation is satisfactory.
- Both handwashing stations (front/back) supplied with cold/hot running water, soap, and paper towels.
- Upright cooler (back of the bakery) = 4C
- Upright freezer (back of the bakery) = -18C
- All refrigeration units equipped with working thermometers. Recommend to have back up thermometers in both coolers and freezers.
- Daily temperature logs kept up to date.
- Food items containing PHFs (ie ham, cheese) time tracked with expiration times. Discarded once expiration times are past. All in compliance.
- Two compartment sink available for manual dishwashing. QUAT sanitizer measured at 200ppm concentration.
- Dry storage area has adequate space and wire racks. Food items are stored min 6 inches (15cm) off the floor.
- No signs of pest activity.
- FOODSAFE certificates could not be verified at the time of the inspection. Ensure to make copies of ALL FOODSAFE certificates on site for review.
