Observation (CORRECTED DURING INSPECTION): The back prep hand washing station did not have paper towels in the unit to enable proper hand drying. Ensure all hand washing stations have liquid soap, paper towels and hot and cold running water when the station is in use.

Observation: 1. Garbage bags were used to store food product and cover trays of food. Garbage bags are contaminated and cannot be used for food storage. They may trigger allergies to latex and chemicals (CORRECTED AT TIME OF INSPECTION).
2. Boxes of food containers and food products were stored in one washroom. Washrooms are contaminated and cannot be used to store food products or equipment. Boxes of food were also stored in the electrical room.
Corrective Action(s): 1. Ensure to only use food grade containers for food storage.
2. Do not store food products or equipment in the washroom or the electrical room. Move all boxes of food and food equipment from to dedicated food storage space. Correction required in two days.

Observation: Sanitizer bottle was did not have chlorine sanitizer label on container. When asked to the operator what the contents were, operator did not know.
Corrective Action(s): Ensure to label sanitizer bottle as chlorine sanitizer to prevent chemical contamination or mix up. Correction required today.

Hand washing station fully stocked with liquid soap, paper towels and running water after correction.
200 ppm chlorine sanitizer in use
No signs of pests. One staff washroom is fully stock with paper towels and liquid soap and is sanitary.
Coolers at 4C and below. Walk in at 3C.
Freezers at -18C.
Hot holding unit at 60C and above
Dishwasher final rinse at 76C at the plate and 82C at the manifold.

Recommendation:
1. Cover the extra front hand sink with a durable, easy to clean cover when not in use. Ensure at least one hand sink is available at work station with liquid soap, running water and paper towels.
2. Finish painting the wooden base for the dough mixer to ensure a smooth, durable, easy to clean surface.
