Observation (CORRECTED DURING INSPECTION): Bin of beansprouts at front server station was measured to be 14C.
Corrective Action(s): Only a small amount of beansprouts can be held in bin to ensure all sprouts are used up within 2 hours. As previously discussed, beansprouts must be held in ice water. Staff added ice to water at time of inspection. Ensure to use up sprouts within the next hour.

Observation: 1) Raw shell eggs were stored above ready-to-eat items in walk-in cooler.
2) Raw seafood in prep cooler inserts were stored next to ready-to-eat vegetables.
3) Some food items in cooelrs and freezers were uncovered.
4) Scoops for dry ingredients were stored directly in the ingredients.
Corrective Action(s): 1) Store raw eggs below all rady-to-eat foods
2) Veggie inserts must have lids on them to protect from potential contamination
3) All food items must be stored properly covered.
4) Do not store scoops directly in dry ingredients, as the handled parts can contaminate food.

Comments

- Hand sinks supplied with hot and cold running water, liquid soap, and paper towels
- Bleach sanitizer solution available at 200 ppm. No detergent was mixed with sanitizer solution - good.
- High-temperature dishwasher reached 75C at dish surface during rinse cycle
- All coolers were maintaining temperatures of 4C or colder
- All freezers were maintaining temperatures of -18C or colder
- Most food items were stored properly covered
- Dry storage area satisfactory
- Ventilation canopy maintained in sanitary condition.
- Ice machine maintained in sanitary condition, scoop properly stored outside of ice bin.
- General sanitation satisfactory
- No signs of pest activity noted

Reminders:
- In-use rice scoop must be stored in ice water and washed and sanitized every 2 hours
- Container for holding bin sprouts at room temperature must only be half-full of beansprouts and used up within 2 hours, and sprouts must be stored in ice water.
- Broth was cooling at time of inspection. Ensure broth cools from 60C to 20C within 2 hours, then from 20C to 4C within the next 4 hours inside a cooler.
