Observation (CORRECTED DURING INSPECTION): Milk stored in the prep cooler measured with an internal food product temperature of 7C. The cooler measured with an ambient air temperature of 7.5C.
Corrective Action(s): Store in the milk in the walk-in cooler. Do not stored any potentially hazardous food in the prep cooler until it is able to maintain an ambient air temperature of 4C or less.

Corrective Action(s): Clean and sanitize the vegetable cutter and utensil trays. Vegetable cutter must cleaned and sanitized after each use. Utensil trays are considered a food contact surface and must be cleaned and sanitized on a regular schedule. Correct by: Immediately.

Routine inspection:
- Walk-in cooler and front display cooler maintained at 4C or less.
- Freezers (stand-up, chest) maintained at -18C or less.
- Hand washing stations provided with hot/cold running water, liquid soap and single use paper towels.
- 100 ppm chlorine sanitizer available in pails with wiping clothes stored inside.
- Low temperature dishwasher dispensed 100 ppm chlorine sanitizer at the plate level.
- Food products stored off the ground and covered.
- Temperature records maintained for the walk-in cooler only. Ensure to maintain a temperature record for all refrigeration units on a daily basis.
- General sanitation satisfactory.
- No pest activities observed at the time of the inspection.
- Permit was posted at a visible location to the public.
