A routine inspection was conducted, the following observations were made:
- Walk-in-cooler was 4C; walk-in-freezer was -21C; and thermometers present.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Bleach sanitizer in spray bottle had [Cl2] of 200ppm.
- All food stored in food grade containers; covered; labeled; date coded; foods stored in groups; and food stored 6" off the floor on shelves or platforms.
- No expired foods in used. FIFO rules being followed.
- General sanitation level is good.
- No signs of pests.
- All surfaces (floors, walls, and equipment) are in good working order, durable, smooth, and cleanable.
- A new "warming" oven installed to warm up flour tortilla dough to make 10" tortillas.
- All in order. |
