Observation (CORRECTED DURING INSPECTION): Half a bowl of mixed salad and one insert of cooked potato measured with an internal temperature of 20C. They were stored under ambient temperature on the food preparation counter and moved to the cooler after.
Corrective Action(s): Discard aforementioned food. Potentially hazardous food must be stored at 4C or less at all times to prevent growth of pathogens and/or their toxins.

301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation (CORRECTED DURING INSPECTION): One dirty bottle cap observed inside the container used to store cleaned bottle caps.
Corrective Action(s): Clean and sanitize the dirty bottle cap. Educate staffs to ensure only cleaned and sanitized bottle caps are stored inside the container.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): 1. Quats sanitizing bucket at front kitchen measured at less than 100 ppm in concentration.
2. Iodine sanitizer stock bottle was observed to be empty for the glass washer.
Corrective Action(s): 1. Discard and refill the bucket with 200 ppm quats sanitizer. If sanitizer is used up quickly during rush hours, change the sanitizing bucket more frequently.
2. Manager installed another iodine stock bottle to the glass washer. Iodine concentration measured at 12.5 ppm at the glass level.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation: Cold water tap for the back kitchen hand washing station was missing. Staff unable to turn on cold water at this hand washing station.
Corrective Action(s): Service / install a cold water tap at this hand washing station. Every hand washing station must be able to provide hot/cold running water. Correct by: Aug 25, 2022.

Observation: 1. Raw seafood was stored beside bags of mixed vegetables in the walk-in cooler.
2. Tongs were stored inside salad bowl with the handle part in direct contact with the salad.
3. Food containers stored in the sandwich coolers were not covered with a physical barrier.
Corrective Action(s): 1. Move the seafood away from mixed vegetables used for salad. Raw and ready to eat food must be stored separate from each other.
2. Do not store tongs in salad with handle part in contact with the food. Aforementioned salad bowl was discarded.
3. Ensure food stored in coolers is covered with a food-grade cover such as saran wrap during storage. Correct by: Immediately.

Observation: 1. Cold water tap for the 2 compartment dishwashing sink was not working properly.
2. Ice cream freezer cover could not be closed properly.
Corrective Action(s): Service / fix the cold water tap at the 2 compartment sink and the icream freezer cover. Correct by: Aug 29, 2022.
