Dessert station hot holding measured > 60 C - good
Ice machine maintained in a sanitary manner - good

Most cold potentially hazardous foods in the buffet line stored SUBMERGED in ice - good. Green salad and potato salad (measured 7C) moved into ice. - Ensure that all cold potentially hazardous foods are submerged in ice.
Observed staff cooling products using ice baths and ice wand. Operator has purchased second ice wand - good. However, cooling must be monitored and recorded daily. Cooling records not available at the time of inspection. AS PER THE PREVIOUSLY ISSUED CORRECTION ORDER: monitor and record all cooling of food products.
All hot potentially hazardous foods are to be cooled from 60C to 20C in 2 hours or less and from 20C to 4C in 4 hours of less.
