Observation (CORRECTED DURING INSPECTION): In-use knife was stored in a bucket of Quat sanitizer. Observed staff removing knife from the sanitizer and wiping it dry with a paper towel.
Corrective Action(s): Cleaning and sanitizing of utensils and other equipment must be done at the three compartment sink. Air drying of utensils must be done for the sanitize step to be done properly.

Observation (CORRECTED DURING INSPECTION): Bucket of Quat sanitizer measured 50 ppm. Solution appeared murky.
Corrective Action(s): Discard and refill with fresh Quat sanitizer. Sanitizer must be changed regularly or when murky to maintain concentration at 200 ppm.

- 200 ppm Quat sanitizer is available (after correction)
