Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: Rags in use without sanitizer prepared.
Correction: All wiping cloth rags in use are to be stored in a container of sanitizer solution (100 ppm chlorine, 1 tea spoon of bleach per 1 litre of water).
Provide chlorine test strips to allow verification of sanitizer concentration.

Tarts observed stored under refrigeration or in food warmer units.

Additional food warmer provided to allow two full trays of tarts to remain hot. Front tray tart 70 C, back tray tart 74 C

Wiping rags stored in 100 ppm chlorine sanitizer solution. Chlorine test strips available onsite to verify sanitizer concentration.

Required premise cleaning conducted.

Stocked liquid soap dispenser available at handsink to allow staff to practice frequent handwashing.

Staff not observed using disposable gloves. Ensure when gloves are used they are discarded after removal.
